Ingredients: Cashew Nuts, Water, Coconut Extract, Penicillium Roqueforti, Salt, Cultures

As you can see, a very simple list of ingredients are used in this vegan cheese, which makes it all the more healthier for you and great for those on a plant based whole food diet.

Appearance

Once you unwrap the paper, you are hit with this mottled dark blue exterior and anticipation hits you, will this taste as blue as it looks?

Once you slice into the interior (which gives a little resistance when you slice) you see deep blue veins and they are like opening blue crevices that penetrate through the cheese.

It's a stunner to look at, even before we move on to trying this cheese, it very much looks similar to a dairy counterpart and we love how it looks.

Just look at those veins!

Aroma

Smells creamy and mouldy, a real delight to the senses.

Flavour

Now this is not a blue vegan cheese for beginners or the faint hearted.

This is a stinky, boldly flavoured blue, that will have your senses buzzing!

I almost feel it's ultra creaminess is deceiving in that you're thinking this is a gentle cheese but right from the first bite the creaminess of the cheese and those blue parts capture you and stay strong.

Although it will melt away on your tongue rather quickly, in comes those gloriously powerful, sharp, piquant flavours just as fast, that take over and linger with your tongue still tantalised by the creamy caress of the overall cheese itself.

This is a cheese flavour that will be sticking around for a good few minutes after you've had a bite and once it starts to lessen, you'll be thinking was it really that bold a blue and you'll take another bite and the circle will start again! 

Texture 

The texture is quite an embodiment and interesting part to this cheese. The overall texture of the cheese is ultra smooth, the yellow main part of the cheese is so so silky smooth that is stopped in it's tracks by those beautiful blue veins that give a delightful firmness to the texture in your mouth.

If you cut a slice and touch it you can even feel the difference in texture on your finger tips as the blue pops a little out of the cheese.

As you might of guessed with this creamy texture it works wonderfully in making a blue cheese sauce too!

Longevity

Wrapped in paper, this little beauty is already mouldy and has a best before of just under a month.

Make sure to keep in the fridge.

No plastic, this artisanal cheese is wrapped in environmentally friendly wrapping and uses artisanal methods in creation. 

Summary

To summarise on the Simply Blue, it's title gives it real justice as it's boldly, unforgivingly blue, with a creaminess and power of a roqueforti.
